Chilly Garlic Chicken Grill

Wanted to enjoy some flavourful grill but not a very spicy one so took this inspiration from seafood and created a greatly flavoured chicken grill which was easy to satisfy my taste buds. You require very few ingredients also to make it.

Ingredients

  • Chicken whole with skin
  • Butter – 2 tbsp
  • Garlic – 12 cloves
  • Green chilly – 8 pcs
  • Pepper – 1 tsp freshly crushed
  • Carrot – 2 nos
  • Onion – 1 nos
  • Potatoes – 3 nos
  • Buttermilk – 2 tbsp (optional)
  • salt

Instructions:

Firstly wash the chicken and pat dry it using a kitchen towel.

Now in a blender jar put garlic,chillies,half onion and 2 tbsp of water and make a paste.

Now in a bowl put the garlic paste to it add butter , pepper powder, salt and buttermilk and mix well.

Many of us love Prawns and have tried different ways to prepare it. This is my aunt’s recipe and I see this as a comfort food or you Can also call it one pot meal as everything cooks together. This is a simple flavourful recipe. Am really greatful to my aunt for introducing goan flavors to me.

Simple Chicken Curry.

This is a simple recipe basically my own way of preparing Chicken. Actually in India every family has their own way of cooking and today am gonna share my way of cooking with you.

Ingredients:

  • Chicken – 500gms
  • Green chillies – 3 slit from middle
  • Ginger garlic paste – 1 tbsp
  • Onion – 3 pcs
  • Tomato – 3 pcs medium
  • Kashmiri Chilly – 7 pcs
  • Cumin/ zeera powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Corriander powder – 2 tsp
  • Garam masala powder – 1tsp
  • Kastoori Methi – 1 large Pinch
  • Sauf /fennel seed powder – 1/2 tsp

Ingredients:

  • Chicken – 800 gms
  • Ginger garlic paste – 2 tbsp
  • Brown onion paste – 1.5 tbsp
  • Red chilly paste – 1.5 tbsp
  • Tomato puree – 400 ml
  • Cashew almonds paste – 1 tbsp
  • Corriander powder – 2 tsp
  • Cumin powder – 2 tsp
  • Garam masala powder – 1 tsp
  • Cream – 2 tbsp
  • Muaturd oil – 2tbsp
  • Curd – 2 tbsp
  • Hot charcoal – 1 pc
  • Ghee – . 5 tsp
  • Fried onions for garnish
  • Chopped corriander leaves for garnishment.

Instructions:

  • In a mixing bowl put the chicken pieces. I have used chicken with skin as I feel it adds flavors and to it add hung curd, chilly paste, corriander powder, cumin powder, turmeric powder, salt and a tbsp of musturd oil. Ingredients:

  • Eggs – 4 nos
  • Milk – 180 ml
  • Capsicum Green – 1 pc
  • Babycorn – 4 pcs
  • Tomatoes – 2 small
  • Onion – 1 large
  • Mushroom – 200 gms
  • Pepper – 1 tsp
  • Salt as per taste

Instructions:

  • First chop onions, capsicum and tomatoes into cubes . After that cut babycorn into round slices and chop and fry the mushroom till they reduce in size.
  • Now in a baking dish break the eggs.

  • Now add milk to it .

  • Now add salt and pepper and whisk it.

  • After this add all the chopped vegetables to it.

  • Now mix it well and place the dish in the oven baked it at 180 degree for 20 mins .

Ingredients:

  • Salmon – 4 pcs
  • Lime – 1
  • Ginger – 1 inch finely chopped
  • Garlic – 6pods finely chopped
  • Chilly – 1 red finely chopped
  • Lemongrass –  half inch finely chopped
  • Baby corn – 5 pcs
  • Zucchini green -1small
  • Zucchini yellow -1small
  • Pineapple – 6 cubes
  • Soya sauce – 50 ml
  • Oregano – 1 tsp
  • Chilly flakes – 1 tsp
  • Kosher salt – a pinch

Instructions:

  • Wash the Salmon properly chop the veggies roughly. In a bowl pour the soy sauce to it add garlic, ginger, oregano, chilly flakes, chopped chillies, lemongrass, lime juice and kosher salt  Mix well.

  • To it add the salmon prices and let them rest for 15 mins.

  • Now after 15 mins take a grill pan and heat it. Add butter and spread it properly on the pan. Add oil so that the butter doesn’t burn.

  • Add the salmon to it and grill it on both side.

Mutton Kastoori Methi

Ingredients:

  • Mutton – 1 kg
  • Musturd oil – 3 tbsp
  • Onion – 5 pcs
  • Ginger garlic – 2 tbsp finely crushed
  • Bay leaf- 3
  • Red chilly powder – 2 tsp
  • Curd – 1/2 cup
  • Turmeric powder – 1 tsp
  • Corriander powder – 1 tsp
  • Kastoori meethi – 3 tsp
  • Salt
  • Cumin powder – 1 tsp

Instructions:

  • First thoroughly wash the mutton after that grind 3 onions and make a fine paste of it. Now in a pressure cooker put this mutton along with onion paste, curd, ginger garlic crushed, red chilly powder, salt and musturd oil. Add 50 ml water close the lid and let it get cook upto 4 whistles.

  • Now heat some oil in a flat bottom pan and to it add the remaining onion ( chop the 2 onion finely)

Ingredients:

  • Mutton – 1 kg
  • Ginger Garlic – 2 tbsp
  • Hung curd – 1/2 cup
  • Mustard oil – 3 tbsp
  • Bay leaves – 2
  • Black cardamom -1
  • Onion – 4
  • Sugar – 1 tsp
  • Tomato – 1.5 cup finely chopped
  • Boiled potatoes – 3 ( optional)
  • Coriander powder – 2 tsp
  • Red chilly powder – 2 tsp
  • Cumin powder – 1 tsp
  • Garam masala powder – 1/2 tsp
  • Salt to taste
  • Fresh coriander
  • Lemon juice – 2 tbsp

Ingredients:

  • Mutton – 500 gms
  • Pulav rice – 3 cups ( basmati rice can be used)
  • Green chilly – 2 slit from between
  • Shahjeera – 1 tsp
  • Ginger garlic paste – 1 tbsp
  • Sauf powder – 2 tsp
  • Dry ginger powder – 1 tsp
  • Red chilly powder – 1 tsp ( optional )
  • Salt
  • Yoghurt – 2 tbsp
  • Oil – 3 tbsp
  • Bay leaves – 3
  • Javitri powder – 1 tsp
  • Saffron milk – 2 tbsp

Instructions: 

  • Soak the rice for 30 mins and wash the mutton properly. Heat oil in a pressure cooker and to it add shahjeera , green chillies and bay leaves

  • Add the meat pieces.

  • And fry them till it turns brownish And to it add sauf powder dry ginger powder, yoghurt, javitri powder, saffron milk,  red chilly powder (optional I added as I wanted it bit spicy) and salt
