Spinach Lasagne

I had First time tasted lasagne at a cafe and since then was thinking of replicating it. I normally love the chicken lasagne but cause of lockdown I had to prepare it’s vegetarian option. I always considere this as a comfort food.

Lasagne is a flat pasta and is made of stacked layers which means we need to make a filling which will be stuffed between 2 lasagne sheets. You can use both white sauce or red sauce to make the fillings along with loads of cheese.

Ingredients:

  • Spinach- 250 gms
  • Feta cheese – 100 gms
  • Garlic – 10 cloves finely chopped
  • Chilly flakes – 1 tsp

Vegetable Manchurian

As we all know this is a popular Indo Chinese cuisine made of minced vegetable balls which are deep fried and served with a flavourful gravy. I love it with noodles.

Ingredients:

  • Cabbage – 1/2
  • Carrot – 3 pcs
  • Capsicum green – 1 pc
  • Cauliflower florets – 8 pcs
  • Ginger – 4 tsp finely chopped
  • Garlic – 5 tsp finely chopped
  • green chillies – 5 pcs finely chopped
  • Whole wheat flour – 3 tbsp
  • Black pepper powder – 2 tsp
  • Soy sauce – 2 tsp
  • Onion – 2 chopped in cubes
  • Vinegar – 1 tsp
  • Tomato ketchup – 2 tsp
  • Water as required
  • Black salt – 1 tsp

Kadala Curry

This recipe was shared by a friend and actually we had prepared it together. It was really awesome. I had prepared many dishes using this but all were North Indian . This is a traditional dish of Kerela. It’s really amazing and can be served as a side dish with rice or chapati.

Ingredients:

  • Kala chana – 1 cup soak it overnight.
  • Coconut – grated 1 cup
  • Curry leaves – 4 pcs
  • Tomato – 2 roughly chopped
  • Coconut milk – 200 ml
  • Onion – 1 small finely chopped

Paneer Butter Masala

Paneer Butter masala it’s a classic repice. Favorite of most of us.Recipe below. Try it and let me know. This serves 4 persons.

Ingredients:

  • Paneer/ cottage cheese- 400 gms cut in cubes
  • Butter – 50 gms
  • Onion – 1 large grind into paste
  • Tomato puree – 200 ml
  • Ginger garlic paste – 1 tbsp
  • Cumin powder – 1.5 tsp
  • Red chilly powder – 2 tsp
  • Fresh cream – 2 tbsp
  • Kastoori meethi – 1 tbsp
  • Garam masala- 1 tsp
  • Corriander powder – 1 tsp
  • Salt to taste
  • Corriander leaves to garnish (optional)
  • Sugar – 1 tsp (optional)

  • Bengal grams – 100 gms
  • Onion – 1 large finely chopped
  • Tomatoes – 2 medium make puree
  • Ginger garlic paste – 1.5 tsp
  • Turmeric powder – 1 tsp
  • Cumin/ jeera powder- 1 tsp
  • Corriander powder – 1.5 tsp
  • Bay leaf -1
  • Cinamon stick – 1 inch

Baigan Bharta or mashed Eggplant

  • Eggplant/Baigan : 1
  • Onion – 1 large finely chopped
  • Tomatoes- 2 roasted and make puree
  • Garlic – 6 cloves finely chopped
  • Green chili -2 finely chopped
  • Cumin powder – 1/2 tsp roasted

  • Bottle gourd- 750 gms
  • Chana dal – 200 gms
  • Green chilly – 2
  • Onion – 1 1/2 medium sized
  • Tomato – 1 medium size
  • Garlic cloves – 4 pcs
  • Ginger – 1 inch finely chopped
  • Anardana / pomegranate seeds- 1/2 tsp (optional)
  • Dry mango powder – 1 tsp
  • Turmeric powder – 1/2 tsp

  • Sauf -1. 5 tbsp
  • Musturd powder-1/2 tsp
  • Kalunji seeds – 1 tsp
  • Meethi – 1 pinch

  • Spinach / Palak – 500 gms
  •  Tofu / Paneer / cottage cheese:200 gms
  • Onion -1 large

  • Cauliflower – 1 large break the florets.
  • Capsicum – 1 small
  • Onion paste – 3 tbsp
