Ingredients:

  • Goat legs – 6 pcs
  • Baking soda – 1 tbsp
  • Onion – 5 pcs large
  • Ginger garlic paste – 2 tbsp
  • Turmeric powder – 1 tsp
  • Corriander powder – 3 tbsp
  • Red chilly powder – 1.5 tbsp
  • Pepper powder – 1 tsp
  • Salt as per taste
  • Mustard oil -2 tbsp
  • Garam masala – 1 tsp
  • Corriander leaves – 1/2 cup
  • Bay leaves – 3
  • Black cardamom -1
  • Pepper corn -8 pcs
  • Green Cardamom – 3 pcs
  • Cloves- 4 pcs
  • Green chilly -3
  • Star Anise-1
  • Cinnamon stick – 1 inch piece

Instructions:

  • Firstly it’s important to wash the goat legs properly so that their is no animal hair on it. Though when I get them the butcher already removes every unwanted hair and skin but to be sure I lightly scrape of the top layer a day then wash it thoroughly in water then I sprinkle baking soda and rub it properly on every piece and let it sit for 3 mins and then rinse with lukewarm water.

  • Add some oil into a pressure cooker and to it add a tsp shahjeera, 1 tsp jeera and 2 bay leaves and cinnamon sticks, 2 green cardamom, 1black cardamom and 5 cloves and fry them for a moment.

  • After this in a pressure cooker I put all the legs and to it I add 1.5 liters of water to it and add 3 rougly chopped onions, bay leaves, 4 green chillies slit from between, 7 peppercorn, salt, garlic 7 pcs,1 inch ginger julienne and salt.

  • Close the lid and let it cook for 10 whistles.

  • Now pour 2 tbsp of mustard oil and let it get smoked and then to it add finely chopped onions 2 pcs and fry till golden brown. And to it add red chilly powder, corriander powder, pepper powder and turmeric powder and ginger garlic paste and let it cook till oil saperates.

  • Once it’s done then add it to the pressure cooker and mix well.

  • Add some freshly chopped corriander.

  • It’s ready to serve. While serving add some lime juice.
