Ingredients:

  • Butter – 70 gms
  • Egg – 4
  • All purpose flour / Maida – 2 cups
  • Castor sugar – 2 cups
  • Cocoa powder- 1/2 cup
  • Baking powder – 1 tsp
  • Rock salt – 1 pinch
  • Strawberry- 100 gms
  • Chocolates of ur choice – 1 cup
  • Chocolate essence- 1 tsp

Instructions:

  • Make sure that the butter is at room temperature. Take 50 gms of it this 50 gms will be used for baking. So in a mixing bowl add 50 gms of butter and 2 cups of castor sugar. And beat it till the mixture gets fluffy. I have used organic sugar so u too can use sugar of your choice.

Ingredients:

  • Chicken – 800 gms
  • Ginger garlic paste – 2 tbsp
  • Brown onion paste – 1.5 tbsp
  • Red chilly paste – 1.5 tbsp
  • Tomato puree – 400 ml
  • Cashew almonds paste – 1 tbsp
  • Corriander powder – 2 tsp
  • Cumin powder – 2 tsp
  • Garam masala powder – 1 tsp
  • Cream – 2 tbsp
  • Muaturd oil – 2tbsp
  • Curd – 2 tbsp
  • Hot charcoal – 1 pc
  • Ghee – . 5 tsp
  • Fried onions for garnish
  • Chopped corriander leaves for garnishment.

Instructions:

  • In a mixing bowl put the chicken pieces. I have used chicken with skin as I feel it adds flavors and to it add hung curd, chilly paste, corriander powder, cumin powder, turmeric powder, salt and a tbsp of musturd oil.   • Eggplant/Baigan : 1
  • Onion – 1 large finely chopped
  • Tomatoes- 2 roasted and make puree
  • Garlic – 6 cloves finely chopped
  • Green chili -2 finely chopped
  • Cumin powder – 1/2 tsp roasted
  • Red chilly powder – 1 tsp
  • Corriander powder – 1 tsp
  • Freshly chopped corriander
  • Cooking oil – 2 tbsp

  • Firstly roasted the brinjal/ eggplant/ baigan on the stove also roast the tomatoes. Once done let it cool and remove the skin.

Ingredients:

  • Bottle gourd- 750 gms
  • Chana dal – 200 gms
  • Green chilly – 2
  • Onion – 1 1/2 medium sized
  • Tomato – 1 medium size
  • Garlic cloves – 4 pcs
  • Ginger – 1 inch finely chopped
  • Anardana / pomegranate seeds- 1/2 tsp (optional)
  • Dry mango powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Roasted cumin powder – 1/2

Til ke Ladoo/ Sesame seeds balls

Ingredients:

  • Til/ Sesame seeds: 200 gms
  • Jaggery/Gur :100 gms
  • Water – 20 ml

Instructions:

  • Firstly dry roast the Sesame seeds on a medium flame.

  • Roast them till the color changes to slight brown and you can get a light aroma .this will make the seeds nutty.

  • Now remove the seeds from the pan and let it cool. In the meanwhile break the jaggery into small pieces and place them on the pan

  • To it add a bit of water in order to prevent it from burning.

  • Cook it till the jaggery lumps disappear and cook it till the syrup thickens. To test it you can put a drop of jaggery syrup in cold water if you can mould the syrup in the shape of a ball in the water then it’s done. .

Methi Paratha

Ingredients:

  • Methi leaves – 300 gms chopped
  • Whole wheat flour – 350 gms
  • Sattu – 100 gms
  • Ajwain – 1 tsp
  • Salt as per taste
  • Water as required
  • Ghee
  • Salt.

Instructions:

  • Firstly wash the methi leaves and chop them finely.
  • After this in the kneading bowl add the methi leaves along with whole wheat flour, sattu, ajwain and salt. Mix them well.

  • Now little by little add water to it and knead this mixture into a soft dough. Once done cover it and let it rest for 30 mins.

  • After this make small balls out of the dough and roll them into chapatti.

  • Now heat the tawa and place the chapatti over it. Bake it on both the sides till it’s done once done apply some ghee over it and then remove it from the tawa. Follow the similar way till all the dough is done.

Ingredients:

  • Eggs – 4 nos
  • Milk – 180 ml
  • Capsicum Green – 1 pc
  • Babycorn – 4 pcs
  • Tomatoes – 2 small
  • Onion – 1 large
  • Mushroom – 200 gms

  • First chop onions, capsicum and tomatoes into cubes . After that cut babycorn into round slices and chop and fry the mushroom till they reduce in size.

Ingredients:

  • Salmon – 4 pcs
  • Lime – 1
  • Ginger – 1 inch finely chopped
  • Garlic – 6pods finely chopped
  • Chilly – 1 red finely chopped
  • Lemongrass –  half inch finely chopped
  • Baby corn – 5 pcs
  • Zucchini green -1small
  • Zucchini yellow -1small
  • Pineapple – 6 cubes
  • Soya sauce – 50 ml
  • Oregano – 1 tsp
  • Chilly flakes – 1 tsp
  • Kosher salt – a pinch

Instructions:

  • Wash the Salmon properly chop the veggies roughly. In a bowl pour the soy sauce to it add garlic, ginger, oregano, chilly flakes, chopped chillies, lemongrass, lime juice and kosher salt  Mix well.

  • To it add the salmon prices and let them rest for 15 mins.

  • Now after 15 mins take a grill pan and heat it. Add butter and spread it properly on the pan. Add oil so that the butter doesn’t burn.

Pita Bread

Ingredients

  • Wheat flour – 2.5 cups
  • Salt – a big pinch
  • Olive oil – 2.5 tbsp
  • Yeast – 1.5 Tbsp
  • Warm water – 200 ml
  • Sugar – 1 tsp

Instructions:

  • In a cup take warm water to it add sugar and dissolve and then add yeast to it and let it rest till the yeast sets. Later in the kneading bowl add olive oil to the flour along with salt and mix it well the mixture should be crumbly and self binding.
  • Now to it add the yeast little by little and knead it into a nice soft dough. Cover it with a wet cloth and let it rest for an hour.

  • Now after an hour again knead the dough and let it rest for some 30 mins. After this make small balls and roll it in the form of chapatti.

Ingredients:

  • Butter -100gms
  • Sugar – 2.5 cups
  • Maida – 2.5 cups
  • Baking powder – 1 tsp
  • Eggs – 6 nos
  • Yellow food color – 1.5 tsp
  • Yoghurt- 2 tbsp
  • Lime juice – 1/2 cup
  • Lime Zest – 1 tbsp

Instructions:

  • Use the butter when it’s at room temperature. To it add sugar and beat until it’s fluffy enough.

  • Now add the egg yolks. Actually I added 2 yolks first and mixed it into the mixture later realizing I forgot to take a pic . Hence added the rest 4 yolks and then took a pic. So you need to just add the yolks to the mixture and then beat the cake well. In the pic you can see I have just added the yolks to cake batter and kept the egg whites saperately in order to use it later. Mix the egg yolks well.
